Simple Light Lunch -- Arugula, Tomato, and Artichoke Salad


Perfect for a day when you say to yourself, "Uh oh, it's 3 o'clock and I haven't eaten lunch yet." Happens to me often on weekends when I don't eat breakfast til 9:30/10:00 and get caught up in a project. This salad is light, lovely, and won't ruin your dinner.

Ingredients:

-1 cup arugula
-1 tomato, chopped or diced as desired (I bet this would be delicious with grape tomatoes, but we didn't have any around the house.)
-3-5 Trader Joe's Marinated Artichoke Hearts
-A drizzle of balsamic
-A couple grinds of pepper
-A pinch of Kosher salt

Directions (although this one is pretty self explanatory):

Top arugula with tomatoes and artichoke hearts. Drizzle balsamic and season with salt and pepper to taste.

I love arugula so much, I could probably eat it plain. The artichokes add the perfect amount of flavor, without all the sugar of a store-bought dressing.

  1. That sounds so delicious! Arugala is my favorite green. I love it on white or pesto pizzas right after they come out of the oven.
